The town of Greenbrier has a new favorite food truck where you can find delicious breakfast burritos, cinnamon rolls, and of course waffles.
GREENBRIER, Ark. — This week Eat it Up visited Faulkner County and the town of Greenbrier for some breakfast burritos, cinnamon rolls, and of course waffles courtesy of the Arkansas Breakfast Club!
For owner and founder Jace McCollum, the Arkansas Breakfast Club food truck is a dream come true. After losing his job of five years, Jason had a choice to make.
“I was pushed to make a decision do I want to follow my dream or work for somebody else? So, we decided to start the Arkansas Breakfast Club,” he said.
Jace has an excellent team behind him that makes the operation run smoothly every single day.
“The smallest most powerful woman in Greenbrier is Little Lexi, that’s my cook, and without her, I don’t think this dream would be possible and the beautiful lady behind the window is my baby mama Amanda who makes our chili as well as other things in the food truck,” Jace said
Jace has come a long way in his journey to running the food truck.
“I am a recovering drug addict, I was incarcerated for 7 years, and I’ve been clean now for 6 years. I went through a program called Renewal Ranch that saved my life.”
He is thankful for the support he’s received from his loved ones and the entire Greenbrier community who named Arkansas Breakfast Club the 2025 New Business of the Year! And it’s easy to see why when you taste it.
“Our best-selling items are our BBB or big breakfast burrito. You can order it with sausage, chorizo, or bacon,” he said.
There’s also a variety of waffle combinations including the “Hedgecock” that features Nutella, Cool Whip, and strawberries. Don’t forget about the Cowboy Breakfast with chili on top of a cornbread waffle and Lexi’s giant popping pop-tarts!
